Coconut Mango Pops

Baby, you deserve an ice-cold popsicle to toast summer, finally! My homemade coconut-mango pops are a rich, delish and sweet treat you’ll make a staple dessert! 

If you haven’t cooked with coconut milk before, this recipe offers an easy and delightful way to experiment! The exotic, creamy, rich coconut flavor will make you feel as though you’re being whisked away to the tropics. Serve these pops on the next sweltering summer day and your friends will love you forever. Makes 8 servings.


2 cups frozen mango chunks

1 (14-ounce) can light coconut milk

1 tablespoon lime juice

2 tablespoons shredded sweetened coconut (optional)


In a food processor, pulse the mango chunks, coconut milk, and lime juice until smooth.

Stir in the shredded coconut, if using. Add additional sugar to taste.

Pour into frozen pop molds. Freeze for approximately 3 hours, or until the pops are solidified and can easily be removed from the molds.

Hint! If you’re having trouble removing the pops from the molds, try running the mold under warm water!
