Here’s a DIY take on one of my favorite foods. With the addition of pumpkin and spices like nutmeg, cinnamon, and ginger, this spiced granola will become your new pick-me-up in the a.m. Get it gurl.
Makes 6 servings
Ingredients:
2 cups rolled oats, preferably organic
1⁄2 cup slivered almonds
1⁄3 cup pepitas (pumpkin seeds)
1⁄4 cup whole flaxseeds
2 tablespoons shredded coconut
1⁄3 cup pumpkin puree
1⁄4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
1⁄2 teaspoon nutmeg
1⁄4 teaspoon ginger
2 tablespoons vegetable oil
1 teaspoon sea salt
1⁄3 cup dried cranberries
1⁄3 cup dried cherries (optional)
Directions:
1 Preheat the oven to 325F. Line a baking sheet with aluminum foil (optional) and coat it with cooking spray.
2 In a large bowl, mix together the oats, almonds, pepitas, flaxseed, coconut, pumpkin puree, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, oil, and sea salt until well combined.
3 Spread the oat mixture evenly over the baking sheet. Bake for approximately 15 minutes. Stir the mixture with a spatula. Return it to the oven and bake for another 15 minutes, or until golden brown and crisp.
4 Once the granola is cool, stir in the cranberries and cherries, if using.
