This is French toast, with soft fluffy slices of shokupan layered with a dreamy matcha whipped cream and fresh, juicy strawberries. It’s a recipe that celebrates balance: the comforting nostalgia of a breakfast classic paired with the elegance of Japanese flavors. Perfect for brunch with friends this weekend!  xx

Serves 4

For the Toast:

  • 2 eggs
  • ½ cup unsweetened almond milk
  • ¼ teaspoon cinnamon
    2 teaspoons sugar
  • 6 slices CK’s Shokupan Bread bread
  • 4 tablespoons butter or coconut oil

For the Cream Filling:

Matcha Whipped Cream

  • 2 cups heavy cream
  • 1 tablespoon sugar
  • ¼-½ teaspoon high quality matcha powder (use matcha love)

To top:

2-3 cups strawberry, thin slices

1- matcha whipped cream in piping bag

dust of powdered sugar & a dust of matcha

Whip the mascarpone, then add in the heavy cream into a stiff whipped cream, using a whisk, or a stand mixer;  fold in the sugar and matcha powder, incorporate well. Transfer into a piping bag with a star tip.

Directions

  1. Make the Matcha Cream

Matcha Whipped Cream

1 cup heavy cream

  • Add a touch of mascarpone
  • 2 teaspoons sugar
  • ¼-½ teaspoon high quality matcha love powder

Whip the mascarpone first – then add in  heavy cream into a stiff whipped cream, using a whisk, or a stand mixer;  fold in the sugar and matcha powder, incorporate well. Transfer into a piping bag with a star tip if desired.

  1. Prepare the Batter
In a medium mixing bowl, whisk together eggs, almond milk, sugar, cinnamon:  Pour into a shallow dish for dipping.
  2. Cook the French Toast
Heat a nonstick skillet or griddle over medium heat and melt 1 tablespoon butter. Dip each slice of bread in the batter, coating both sides. Place onto the skillet and cook 2–3 minutes per side, until golden brown and slightly crisp. Keep in a warm oven on a rack + sheet tray at 200 degrees between each recipe.
  3. Assemble
Place one slice of bread down on a plate: pipe the matcha cream onto one slice of French toast.

Add the strawberry slices- Top with another slice to make a sandwich. Repeat with remaining bread.

  1. Serve
Top with strawberry slices and a dusting of matcha or powdered sugar. Serve warm.

Candice’s Tip: Matcha is rich in antioxidants called catechins, which help fight free radicals and support calm, focused energy without the jitters of coffee. Pairing it with strawberries — loaded with vitamin C for radiant skin and immune support — makes this indulgent French toast both delicious and nourishing.
