How to stay cool: matcha ice cream sandwiches

Line up 4 of the cookies on a clean work surface. Using a large spoon or an ice cream scooper, add the ice cream to ll each “sandwich.” Add another cookie on top.
Place the rainbow sprinkles on a shallow plate, and roll the exposed ice cream on the edges of the sandwich in the sprinkles. Or sprinkle them directly on the sandwiched ice cream, if desired.
Immediately and carefully wrap in the sandwiches in plastic wrap and place in the freezer for 20 to 30 minutes to solidify. Enjoy immediately!
