Late-Summer Recipes With Nature’s Intent® Organic Apple Cider Vinegar

As we look toward the late summer months, I am so excited to share with you two delicious recipes created in partnership with Nature’s Intent® Organic Apple Cider Vinegar, which is raw, unfiltered and made with the mother. These recipes transition the fun, fruitiness of summer into the sophisticated, reflective feeling of fall.

You know how much I love cooking with fermented foods such as kimchi and miso, but I find that apple cider vinegar is one of my favorites! In my experience as a health and wellness writer, I love incorporating ACV into my recipes because of all the healthy bacteria within the mother (the web-like strand of proteins).

Also, Nature’s Intent Organic Apple Cider Vinegar brightens and awakens the taste of my favorite recipes (including the two I’m about to share with you!). It has a clean, crisp flavor that enhances other ingredients with a subtle, sweet-and-sour twist.

Miso Kale Caesar Salad

I’ve changed up your typical Caesar and made it my own. Inspired by my childhood in So Cal with my Japanese mom, flavors of miso, sesame and toasted nori are balanced with the bright acidity of Nature’s Intent Organic Apple Cider Vinegar, making it a perfect complement to the heartiness of the kale, raw white corn and avocado.

Prep Time: 15 minutes
Cook Time: 20 minutes 

Ingredients

1 large bunch curly kale, finely chopped

½ cup raw white corn, shaved off the cobb (approximately 1 ear)

2 cups daikon radish, peeled, halved and thinly sliced into half-moons (approximately ½ a radish)

2 ripe avocados, halved, pitted, peeled and cut into ¾-inch cubes

2 Tbsp. sesame seeds or hemp seeds, baked at 350ºF for approximately 16-18 minutes or until browned

3 Tbsp. Nature’s Intent Organic Apple Cider Vinegar

¼ cup tahini paste

¼ cup organic red or white miso paste

¼ cup rice vinegar

1 tsp. honey or maple syrup

Optional Protein Topping:

8 oz. grilled wild salmon

8 oz. grilled organic tofu, cubed

Directions 

  1. In a medium mixing bowl, add tahini paste, organic miso paste, rice vinegar, honey and apple cider vinegar. Whisk well to combine.
  2. Add finely chopped kale, raw white corn and daikon radish. Toss well to combine in dressing.
  3. Serve topped with your choice of protein, cubed avocado and toasted sesame seeds or hemp seeds.

Ginger ACV Detox Spritz

Try this spritz using Nature’s Intent Apple Cider Vinegar! This drink is such an exciting way to incorporate the detoxifying effects of apple cider vinegar into your life. The fresh ginger and kombucha are brightened and awakened by the apple cider vinegar, making it a refreshing pick-me-up or healthy mocktail.

Ingredients

2 Tbsp. Nature’s Intent Organic Apple Cider Vinegar

2 cups seltzer water

½ cup kombucha

1 Tbsp. freshly ground ginger

 

Directions 

  1. Add organic apple cider vinegar, seltzer water, kombucha and freshly ground ginger into a glass. Gently stir and drink immediately!
