Avocados – also known as my absolute favorite food ever! You’ll find this super anti-inflammatory fruit in just about every chapter in my books. Try them in my Clean Green Guacamole and Homemade Chili-Lime Chips, use them to top your new vegan favorite, Jackfruit Curry Tacos, and toss them into my Macrobiotic Hijiki-Avocado Salad. This heart-healthy fruit is also full of natural fiber and contains high levels of vitamin E and vi- tamin K. Talk about an internal beauty regime! And it’s packed with cancer- fighting carotenoids, which can help with overall eye health, too!

Avocados also help to support cardiovascular health and have been shown to reduce the risk of stroke and coronary artery disease. Your beau- tiful heart will reap the benefits of the oleic acid and omega-3 fatty acids found in avocado, which can also help to reduce your cholesterol. Studies have shown that an avocado-rich diet improves your lipid profile.

Avocados are also a beauty food—they have been linked to promoting a healthy body weight and BMI, and those healthy fats will do wonders for your skin, hair, and nails. I eat an avocado daily. It’s a way better source of Vitamin E than any beauty cream. Look for semifirm avocados that are a nice dark green color. Not too hard, not too soft, but just right!

Tahini Avocado Chickpea Dip

1 avocado, halved, pitted, peeled, and cubed
1 can chickpeas (garbanzo beans), rinsed and drained 3 tablespoons tahini paste (see footnote page 108)
2 teaspoons Bragg Liquid Aminos

In a medium bowl, mash the chickpeas with a fork or potato masher. Add the avocado and continue mashing until the chickpeas and avocado are combined. Stir in the tahini paste and Bragg Liquid Aminos and mix to incorporate.

Serve the dip alongside your choice of crudités, toasted bread, or rice crackers. Add a squeeze of fresh lemon to brighten it up after refrigerating (and to add a hit of Vitamin C!).
