Brussels Sprout Clean Green Salad

Brussels Sprout Clean Green Salad
Serves 4

2 teaspoons honey
3 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
1/2teaspoon sea salt
1 1/2 pounds Brussels sprouts, thinly shaved on a mandolin, or finely sliced
1/4 cup dried cranberries
1/4 cup thinly sliced almonds, toasted
1/4 cup pecorino Romano cheese (use sparingly)

1. In a large mixing bowl, mix the honey, apple cider vinegar, olive oil, and salt; add in Brussels sprouts and toss in to combine.
2. Add the cranberries and toasted almonds. Finish with pecorino Romano cheese; use sparingly.
