Clean Avocado + Kale & Amaranth Bowl

If you want sparkling, gorgeous eyes and vibrant skin, head to your local grocer, not the beauty supply store. No makeup, cream, or miracle salve will nourish those bright, beautiful eyes from the inside like the Vitamin A you’ll get from sweet potatoes or yams and crisp carrots. Plus the additional beta-carotene and lutein from the carrot ginger vinaigrette and kale will help keep you and your gorgeous face shining bright!

Serves 2

Ingredients:

3 cups cooked amaranth grains (approximately 3 cups uncooked), divided 1.5 cups per person

(Approximately 1 1/2 cups uncooked amaranth, cooked with 2.5 cups water)

Yes! Amaranth is naturally g-free and has a porridge-like-consistency

Top each bowl with:

1/2 cup roasted sweet potatoes, divided

1/2 cup fresh shredded baby kale, divided

1 ripe avocado, cubed, divided

1/2 cup Carrot Ginger Vinaigrette, divided into 2 tablespoons each (see below)

To assemble:

1- In two separate bowls: Add your amaranth grains, (or try brown rice, quinoa or farro!) Top each bowl with an equal amount of avocado cubes, sweet potato, shredded kale, and add leftover roasted veggies if desired, a sprinkle of hemp or flax seed even! Dress each bowl with 2 tablespoons of Carrot Ginger Vinaigrette to top it off.

Carrot Ginger Vinaigrette

Yields 1 ¼ cups

Vegan, Vitamin A, No oil! (wow!)

If you love the healthy sweetness of carrots balanced with the acidity of rice vinegar, the spice from ginger and the saltiness of Tamari reduced sodium soy sauce, you’ll like totally LOVE this clean green vinaigrette recipe!

Ingredients:

3 carrots, peeled, rough chopped

2 tablespoons yellow onion, rough chopped

½ cup rice vinegar (unsweetened)

2 tablespoons tamari soy sauce

2 tablespoons water

2 tablespoons fresh ginger, roughly chopped

Directions:

Combine all of the ingredients into a blender and blend until smooth. Place into a mason jar and store for up to 2 weeks.
