Clean Green Flatbread Pizza
Serves 8

If you say you aren’t a fan of pizza, I’ll say you’re a liar! Pizza can be green, fresh, and delicious, but don’t just take my word for it. Cook up a fresh, homemade batch of this delicious flatbread and taste how green, clean, and fresh it can be.

2 tablespoons extra-virgin olive oil, divided
1 medium red onion, thinly sliced, preferably on a mandoline
1 pound store-bought pizza dough (gluten-free pizza dough is great!)
1/4 teaspoon sea salt to taste
1 cup fresh heirloom tomatoes, thinly sliced
1 cup fresh grape or cherry tomatoes, halved
1 cup arugula
3 ounces chèvre (goat cheese) 

1. Preheat the oven to 350°F.
2. Heat 1 tablespoon of the olive oil in a large skillet over low heat. Add onion and cook, stirring occasionally, until onion is golden, about 20 minutes. Set aside.
3. Roll out the pizza dough with a touch of flour if needed and place it on a large baking sheet. Bake for about 10 minutes, or until golden brown.
4. Transfer the flatbread to a large platter and brush it with the remaining 1 tablespoon olive oil and a sprinkle of salt. Top with the onions, tomatoes, arugula, chèvre cheese, and enjoy! Clean Green Pizza!
