Cleansing Cucumber Soup

This refreshing, delicate cucumber soup is a perfect pairing to a gorgeous and sunny day. It’s also a great palate cleanser for anyone looking for that clean, cleansing feeling, not too full, not too deprived, but juuust right.

Cleansing Cucumber Soup
Serves 4

1 large English cucumber, rough chopped
1 ripe avocado, pitted, cubed
2 tablespoons red onion, chopped
1 tablespoon fresh dill, chopped
Juice of 1/2 lime
1 teaspoon sea salt
1 1/2 cups cold water
4 fresh dill sprigs, to garnish

1. In a large food processor, combine cucumber, avocado, red onion, dill, lime juice, and sea salt and process for 30 seconds to combine.
2. Stream in the cold water and blend until smooth.
3. Chill for 30 minutes, or serve immediately, topping with a sprig of dill to garnish.
