In a food processor, pulse the mango chunks, coconut milk, and lime juice until smooth.
Stir in the shredded coconut, if using. Add additional sugar to taste.
Pour into frozen pop molds. Freeze for approximately 3 hours, or until the pops are solidified and can easily be removed from the molds.
Hint! If you’re having trouble removing the pops from the molds, try running the mold under warm water!
