Roasted Dumpling Squash

Super loaded with vitamin A, packed with fiber, calcium and iron, this cute lil’ Dumpling Squash, aka Winter Squash, isn’t just pretty to look at, she’s pretty delicious too! You may just tend to pass over the “festive” looking squash section in your grocery aisle, but come on now, did you have any idea what you were missing out on? Or you may have used them to create your adorable cornucopia centerpiece but then you tossed them in the trash!? You’re missing out! These are a gold mine of delish flavor, nutrients and what’s totally in season NOW. ¬†Roast it up and make it fabulous!

1 or two beautiful Dumpling/Winter/Acorn Squashes! Cut into thin, quarter like half moons, toss with olive oil.

2 Tablespoons Extra Virgin olive oil

1 Tablespoon sea salt

Roast ‘er up!

1- In a 375 degree oven, roast on a well-oiled sheet tray for about 45 minutes.Get that delicious golden brown color on there.. Mmmhmm deeelish!

2- Remove from oven and sprinkle with sea salt, fresh basil and if you’re in the mood, a hint of Chevre or Gruyere cheese!¬† Serve with a side of quinoa salad.
