Freekeh, Avocado & Roma Tomato Salad

Serves 4


2 cups Freekeh, Farro or Quinoa, (your choice!) cooked and cooled slightly

2 ripe Roma tomatoes

1 medium cucumber, peeled and sliced into half-moons

½ cup fresh Italian parsley, torn, stems removed

1 large ripe avocado, sliced

For the Dressing:

2 tablespoons avocado oil or extra virgin olive oil

Juice of ½ a lemon

1/4 tablespoon fresh grated ginger

1 tablespoon low sodium Tamari



  1. In a medium saucepan, cook the freekeh/farro/quinoa with 2 ½ cups of water, bring to a boil, then simmer on low for approximately 20 minutes or until all the liquid is absorbed. Remove from heat and cool slightly.
  1. When the grains are all cooked through, remove from the heat and cool.


  1. Place the ingredients for the dressing into a large mixing bowl and whisk well to combine. Add the cooled grains to the bowl and toss to combine well.


  1. Add the sliced Roma tomatoes, sliced cucumber, and parsley. Toss gently to combine. Top off with avocado slices, and season the salad to taste as needed. Mmm too delish, so clean and nurturing! Enjoy my lovely! xx ck
