Barley is one of those nutty+earthy grains that people seem to be a bit confused by. Barley contains a plethora of nutrients, it has a pasta- like consistency, aids in digestion as well as keeps you fuller, longer.

Barley is also a great source of selenium, phosphorus, copper and magnesium. Say whaaat? Meaning its naturally nutrient dense and packed with boatloads of vitamins and minerals.

I love to swap it for cous cous, or any kind of boring old grain… it’s important to try something new, diff and just plain ol’ fabulous. Try new ingredients, buy bulk grains at the market, you know from those bins? At .99 cents — $1.99 a lb for most, you’re frugal + fab honey!
