Homemade Healing Bone Broth

My incredibly talented and super-traditional Japanese momma has been making her own stock for over 40 years. My sweet Japanese Baachan (Grandma) used to make a stock from whole chickens, back in the 1950’s & 60’s. Fun fact: “Kashiwa jiru” is “Chicken Soup” in Japanese. And of course, they passed on these recipes to me when I was old enough to cook with them. Some traditions are meant to live forever and it is important that we preserve the very best recipes and encourage others to cook more.

My beautiful mom came over to the US in 1975 to marry my strong and brilliant American father after they met when he in the US Navy, stationed in Japan. Their beloved neighbors in Connecticut, Millie and Bruno, shared many of their American traditions with my  mom in the 1970’s. One she remembers clearly: Millie’s homemade broth. Mom’s been making this recipe with me since I was  little in Cali! I can even remember in high school, she could barely get me to eat breakfast early in the am, while running off to campus, so she’d heat me a cup of hot broth while getting ready for school to make sure I got my nutrition on.

Who knew that paleo geeks and food trends would make stock/broth more of a daily staple?

While bone broth is now seeing its heyday in food and wellness trends, largely due to my super clever and multi-talented friend, Chef Marco Canora (Check out his spot Brodo in the East Village, NYC), we chefs have been making stocks and broths since we started cooking on the line, and well, while at home with Mom/Grandma when we were youngins. I first wrote about homemade bone broth in my beloved first solo book, Pretty Delicious back in 2009. Ain’t nothin’ better than the real thing.

As a tradition, Mom always makes homemade turkey broth after Thanksgiving and we create homemade Turkey Udon, Soba and even Ramen! Umm, yes! Try my simple and fool-proof recipe below, using leftover turkey bones from Thanksgiving & or a rotisserie chicken on a cold winter night!

Experts say that bone broth may help to “heal” your gut, and aid in better digestion, as well as naturally fighting inflammation and possibly even infection.  The natural gelatin found in the broth may help with gorgeous hair, skin and nails. It’s a food that truly heals, brings you comfort and major beauty benefits. I seriously just love it because it makes me feel good!

Remember, if you want true healing benefits of collagen, its still best to eat plenty of dark-leafy greens, like kale, collard greens, arugula, broccoli rabe or spinach. Fruits like cherries, guavas, citrus are also fab for collagen boosting and protecting your beautiful skin. Foods that contain vitamin C are perf for a radiant glow! Overall, you don’t need to go nutzo on the trends, just keep it simple. Eat real foods, ditch the processed junk, consume less-sugar and more foods with benefits! And cook more! xx Candice

Candice’s Healing Homemade Bone Broth 

Serves 6 


For the broth:

2 tablespoons extra virgin olive oil

3 medium carrots, rough chopped

2 celery stalks, rough chopped

1 yellow onion, roughly chopped

5-6 peppercorns

1-2 bay leaves

Bones of 1 already carved roasted or rotisserie chicken or 3/4 of a roasted turkey, with all meat saved aside. 

1- Heat the oil in a large stock pot over medium-high heat. Add the carrots, celery, onions, peppercorns and bay leaves, reduce the heat to medium-low and cook, stirring often, until they’re soft and fragrant (but not browned), about 7 minutes.

2- Add the bones and cook to heat through, stirring often, about 2 minutes. Add 6-8 cups of water to the pot (it should cover the bones) and bring to a boil. Reduce the heat to medium-low. Simmer until the broth is a rich yellow/gold color, about 3 hours (you can go longer if desired, just be sure to keep an eye on the broth), skimming off any foam that rises to the surface. Strain through a mesh sieve and set aside. Cool completely.. my mom likes finishing her broth with soy sauce when making homemade udon and soba noodle soup. I store mine in air-tight mason jars for up to a week in the fridge and drink in the morning before heading to work! Enjoy & happy healing xxx ck
