Frozen wine pops are sexy, sweet, and refreshing. Blend this version well with fresh mint, honeydew melon, and white wine, and you’ve got the perfect treat for the next warm afternoon!
Makes 10 servings
Infused Simple Syrup:
1 cup water
1 cup granulated sugar
4 sprigs fresh mint
1/2 honeydew melon, peeled and cubed
3/4 cup sweet or dry white wine
In a small saucepan, combine the water, sugar, and mint springs. Simmer gently for 10 minutes. Cool and reserve.
To Make the Pops:
In a blender, blend the honeydew and white wine. Add the syrup and pulse to combine.
Pour the mixture into individual ice pop molds, add sticks, and freeze until solid, approximately 6 hours.
