Serves 8 as an appetizer
INGREDIENTS
8 oz organic feta in brine, drained
¾ cup olive oil
1 hothouse cucumber, peeled and sliced into small cubes
2-3 roasted garlic cloves
Fresh parsley to top, torn leaves
Fresh oregano to top, leaves removed from stems
chili flakes
lemon zest , a touch of lemon juice
DIRECTIONS
- In a large mixing bowl, add the drained, feta cubes.
- Add in cucumber cubes, pour olive oil over the top, finish with a touch of the roasted garlic.
- Transfer to a beautiful plated shallow bowl, top off with parsley and oregano leaves and a touch of chili flakes & lemon juice.
- Serve with crostini- you can make this ahead, cover and marinate in the fridge for at least 30 minutes. Serve + enjoy!
