Pesto, Pea & Watercress Bowl

So simple, so fresh and so clean. This pasta fave of mine is a “throw together and serve” recipe that you will die over – both the taste and the ease! Super for after a long day at work – treat yourself to something homemade!

Serves 4

Ingredients:

pasta (gf or regular)

bag of organic, frozen green peas

1 bunch watercress, trimmed

dollop of Greek yogurt

fresh kale pesto made in your Vitamix!

Parmesan cheese, (hemp seeds or nutritional yeast!)

lemon

sea salt

Directions:

Cook pasta according to package directions and to save time, cook your peas in with your pasta. Strain and cool.

Place pasta and peas into 4 equal serving bowls and top off with watercress.

Mix Greek yogurt and pesto together and place a dollop in each bowl.

Sprinkle pasta with Parmesan cheese (or hemp seed/nutritional yeast), lemon, and sea salt and serve. You are so special! xx
