Serves 4
For the Spiced Pears:
1 large Bartlett pears, (or two small) thinly sliced
1/3 cup dried cranberries
1 tablespoon real maple syrup (optional, less sugar the better!)
1/2 teaspoon cinnamon
For the Toast:
2 eggs
1/3 cup unsweetened almond milk
1 tablespoon real maple syrup
¼ teaspoon cinnamon
¼ teaspoon pumpkin spice
8 slices whole grain bread (Gluten-free works great, too!)
1 teaspoon butter
2 tablespoons real almond butter
1- In a medium mixing bowl, add the ingredients for the Spiced Pears: Sliced pears, dried cranberries, maple syrup, cinnamon and pumpkin spice.
2-In a medium griddle pan or sauté pan, add the 1 teaspoon of butter over medium-high heat. Add in the spiced, sliced pears. Saute for 7 minutes.
3 – In a medium mixing bowl, combine milk, eggs, cinnamon and maple syrup; whisk well to combine. Add batter to a shallow dish.
4 – Add a pat of butter to the pan, melt. Spread a thin layer of almond butter on one side of bread
5- Dip a slice of bread on both sides in the French toast batter. Place in a hot lightly buttered skillet. Cook 2 to 3 minutes on each side or until golden brown .
6 – Repeat with remaining bread. Serve hot with a dust of powdered sugar on top.
